Off the cuff chicken and veggie soup!

Last night my boyfriend got home from going to the gym and two days back to back golfing and ended up shaking from being cold to really hot. He is feeling better today but I decided to make him some chicken soup. We are both trying to reduce our carbohydrate intake so I left the noodles out.                                                                   I started off putting chicken breast in the slow cooker with salt, pepper, garlic powder and 1 cup of water. I let it cook on low for 6 hours. Once it was cooked I shredded it and put to the side while I sautéed garlic, onion, jalapeño,  celery and carrots. I then added the no salt added chicken broth, 2 cups of water and let it simmer on medium for 35 minutes.

Five minutes before the soup was done I added the shredded chicken and added some red chili flakes. The soup was perfectly spiced and my boyfriend loved it!

Leftovers and mixing it up!

Tonight my boyfriend and I did a mash up of the last couple of days – we had the leftover shredded chicken and mashed sweet potato as well as a fresh batch of the spiced beans and some mixed greens with a balsamic vinaigrette. My boyfriend is not usually a salad eater so getting him to start eating the greens has been awesome.
